Lemon Lavender Shortbread Cookies


Ingredients:

  • 1 cup unsalted butter, softened
  • 1/2 cup powdered sugar
  • 2 cups all-purpose flour
  • Zest of 1 lemon
  • 1 tablespoon culinary lavender buds
  • 1/4 teaspoon salt


Instructions:

  1. In a large mixing bowl, cream together the softened butter and powdered sugar until light and fluffy.
  2. Gradually add the flour, lemon zest, lavender buds, and salt to the butter mixture, mixing until a dough forms.
  3. Divide the dough in half and shape each half into a log about 1 1/2 inches in diameter. Wrap the logs in plastic wrap and chill in the refrigerator for at least 1 hour, or until firm.
  4. Preheat the oven to 325°F (160°C). Line a baking sheet with parchment paper.
  5. Remove the chilled dough from the refrigerator and slice it into 1/4-inch-thick rounds. Place the rounds on the prepared baking sheet, spacing them about 1 inch apart.
  6. Bake the cookies for 12-15 minutes, or until the edges are lightly golden.
  7. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
